For the Meatballs:
1 lb ground beef (or premade meatballs)
1/4 cup breadcrumbs
1 egg
2 tbsp milk
1/2 tsp garlic powder
1/2 tsp onion powder
Salt & pepper to taste
1/2 cup brown gravy (store-bought or homemade)
For the Mashed Potatoes:
2 large russet potatoes, peeled and cubed
1/4 cup milk
2 tbsp butter
Salt & black pepper to taste
For the Veggie Side:
1 1/2 cups baby carrots
1/2 cup green peas (frozen or fresh)
1 tbsp butter
Salt & pepper to taste
Mix beef, egg, breadcrumbs, milk, and seasoning. Roll into balls and bake at 400°F for 20 minutes, or pan-fry until browned. These bring that savory, juicy bite and easy meal prep win.
Heat meatballs in brown gravy just before serving. That rich saucy finish ties it all together like a comfort food hug.
