Ingredients:
2 cups arugula or mixed greens πΏ
½ cup cooked chickpeas π§
½ cup cooked pasta (fusilli or rotini) π
¼ cup tuna chunks π
1 boiled egg, quartered π₯
¼ cup shredded carrots π₯
¼ cup mixed olives (green & black) π«
¼ cup diced mozzarella or feta cheese π§
1 tbsp olive oil & 1 tsp lemon juice π
Salt, pepper & chopped parsley to taste πΏ
Instructions:
1. Layer greens in a bowl.
2. Arrange chickpeas, pasta, tuna, egg, carrots, olives, and cheese neatly on top.
3. Drizzle olive oil and lemon juice.
4. Season with salt, pepper, and parsley.
