Ingredients:
- 1 pound fresh green beans, trimmed
- 4 medium potatoes, diced
- 1 medium onion, chopped
- 4 slices of bacon, chopped
- 1 packet ranch dressing mix (about 1 ounce)
- 1 cup chicken broth
- Salt and pepper to taste
Instructions:
1. In a large pot, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pan.
2. In the same pot, add the chopped onion and cook until soft, about 3-4 minutes.
3. Add the diced potatoes to the pot, stirring to coat in the bacon drippings. Cook for about 5 minutes.
4. Add the trimmed green beans to the pot with the potatoes and onion.
5. Sprinkle the ranch dressing mix over the top and pour in the chicken broth.
6. Season with salt and pepper to taste, then stir everything together.
7. Cover the pot and let it simmer on medium-low heat for about 20-25 minutes until the potatoes and beans are tender.
8. Stir in the cooked bacon before serving. Enjoy!
