Crust
¾ cup pistachio cookie crumbs (or graham/crunchy biscuit)
2 tbsp melted butter
Pistachio Cheesecake Filling
200 g (7 oz) cream cheese, softened
100 g (½ cup) powdered sugar
½ cup pistachio paste
½ tsp vanilla extract
½ cup heavy cream, whipped
Raspberry Heart
½ cup raspberry jam or puree
Glossy Green Glaze
½ cup white chocolate
¼ cup sweetened condensed milk
¼ cup water
½ tsp green gel food coloring
๐ฉ๐ณ Instructions
1️⃣ Prepare the Base
Mix pistachio crumbs with melted butter
Press into silicone half-sphere molds or muffin liners
Chill 15 minutes
2️⃣ Make Cheesecake Filling
Beat cream cheese, powdered sugar, pistachio paste, and vanilla until smooth
Fold in whipped cream gently
3️⃣ Assemble Domes
Spoon a layer of cheesecake into molds, leaving a small cavity in the center
Fill cavity with raspberry jam/puree
Cover with remaining cheesecake, smoothing the top
Freeze 1–2 hours until firm
4️⃣ Prepare the Glaze
Melt white chocolate with condensed milk and water over low heat
Stir in green food coloring until smooth
5️⃣ Glaze the Domes
Remove domes from molds
Pour glaze over frozen domes for a smooth, glossy finish
Chill until ready to serve
