An easy weeknight dinner idea that’s bursting with bold spicy flavor!
8–10 large shrimp, peeled and deveined
1 tsp Cajun seasoning
1 tbsp olive oil or butter
2 cups cooked rice (day-old preferred)
1/2 cup frozen mixed veggies (peas, corn, carrots)
2 cloves garlic, minced
2 green onions, chopped
2 eggs, beaten
2 tbsp soy sauce
Salt & pepper to taste
Drizzle of creamy spicy mayo (sriracha + mayo mix)
Toss shrimp with Cajun seasoning. Sear in hot oil for 2–3 minutes per side until juicy and charred. This adds major flavor heat and gives the dish its signature spicy twist.
In the same pan, add garlic and mixed veggies. SautΓ© until fragrant—about 2–3 minutes. This creates a crave-worthy savory base for your fried rice magic.
Push veggies to one side and scramble eggs on the other side of the pan. Combine everything together. It’s the best fried rice trick and adds rich texture.
Stir in cooked rice and soy sauce. Toss well to coat everything evenly. Season with salt and pepper to taste. Now you've got that takeout-style finish with an easy at-home twist.
Top rice with the sizzling Cajun shrimp. Drizzle creamy spicy mayo over the top for the final flavor bomb and a mouthwatering visual finish.
