• 1 lb chicken breast or thighs, diced

• 2 cups cooked rice (white, jasmine, or Mexican rice)

• 1 tbsp olive oil

• 1 tsp chili powder

• 1/2 tsp paprika

• 1/2 tsp cumin

• 1/2 tsp garlic powder

• Salt & pepper to taste

street-corn mix:

• 1 1/2 cups corn (fresh, frozen, or canned)

• 2 tbsp mayo

• 2 tbsp sour cream

• 1 tbsp lime juice

• 1/3 cup cotija or feta cheese

• 1/2 tsp chili powder

• 1 clove minced garlic

• 1 tbsp chopped cilantro

optional toppings:

• Avocado slices

• Extra lime

• More cotija

• Hot sauce

cook the chicken

Heat oil in a skillet. Season chicken with chili powder, paprika, cumin, garlic powder, salt, and pepper. Cook until browned and juicy, about 6–8 minutes.

make the street-corn

In the same pan, add corn and toast it a bit until slightly charred. Remove from heat and stir in mayo, sour cream, lime juice, cotija, chili powder, garlic, and cilantro. Creamy, smoky, perfect.

build the bowl

Add warm rice to each bowl. Top with the seasoned chicken and a big scoop of the creamy street-corn mix.

finish it off

Squeeze lime over the top, add avocado, extra cheese, cilantro, or your favorite hot sauce.
