Cheesy Parmesan Garlic Chicken & Potatoes


A one-pan, cozy, cheesy weeknight hero that tastes like pure comfort. Tender chicken, golden potatoes, and a creamy garlic-Parmesan sauce that clings to everything… your family will ask for this weekly!

ingredients:

• 1.5–2 lbs chicken breasts or thighs, cut into chunks

• 1.5 lbs baby potatoes, halved

• 3 tbsp butter

• 4 cloves garlic, minced

• 1 cup heavy cream

• 1 cup chicken broth

• 1 cup freshly grated Parmesan

• 1 tsp Italian seasoning

• 1 tsp paprika

• 1/2 tsp onion powder

• Salt & black pepper to taste

• 1 cup shredded mozzarella (optional but heavenly)

• Fresh parsley for garnish

directions:

sear the chicken

Season chicken with salt, pepper, paprika, and onion powder. Heat 1 tbsp butter in a large skillet and sear chicken until lightly golden. Remove and set aside.

cook the potatoes

Add remaining butter to the skillet. Toss in the potatoes and cook 8–10 minutes until lightly browned. Season with a pinch of salt and Italian seasoning.

build the sauce

Stir in minced garlic and cook 30 seconds. Pour in chicken broth and heavy cream. Add Parmesan and stir until the sauce melts into a creamy, dreamy blanket.

bring it all together

Return chicken to the skillet. Stir everything well, cover, and simmer on low 15–20 minutes until potatoes are tender and chicken is cooked through.

make it cheesy

Sprinkle mozzarella on top and cover again for 2–3 minutes until melty and gooey.

serve

Garnish with parsley and scoop up big, cozy servings. Perfect with a side salad or crusty bread to wipe the plate clean.

tips:

• Use thighs if you want extra-tender, juicier bites.

• Add spinach at the end to sneak in some greens.

• For extra flavor, brown the butter before adding garlic.
