Golden, crunchy mozzarella sticks kicked up with bold Nashville hot seasoning, then drizzled in fiery butter. Crunch on the outside, stretchy cheese on the inside — these disappear fast.

for the mozzarella sticks
• 12 mozzarella string cheese sticks
• 1 cup all-purpose flour
• 2 large eggs
• 2 tbsp milk
• 1 1/2 cups seasoned breadcrumbs or panko
• Oil, for frying
for the Nashville hot butter
• 1/4 cup unsalted butter
• 1–2 tbsp cayenne pepper (to taste)
• 1 tbsp brown sugar
• 1 tsp smoked paprika
• 1/2 tsp garlic powder
• 1/2 tsp onion powder
• 1/2 tsp chili powder
• Salt, to taste
for serving
• Ranch or blue cheese dressing
• Pickle chips (optional, but very Nashville)

prep the cheese
Unwrap mozzarella sticks and freeze for at least 30–45 minutes. This helps prevent melting during frying.
bread the sticks
Set up three bowls: flour in one, eggs mixed with milk in another, breadcrumbs in the third.
Roll each frozen cheese stick in flour, dip in egg, then coat in breadcrumbs.
For extra crunch, repeat egg and breadcrumb step.
Return breaded sticks to the freezer for 15 minutes.

Heat oil to 350°F (175°C).
Fry mozzarella sticks in batches for 1–2 minutes, until golden brown.
Remove and drain on paper towels.
make the Nashville hot butter
In a small saucepan over low heat, melt butter.
Stir in cayenne, brown sugar, paprika, garlic powder, onion powder, chili powder, and salt.
Remove from heat.
bring the heat
Brush or drizzle hot butter over fried mozzarella sticks immediately.
serve
Serve hot with ranch or blue cheese and pickle chips on the side.

• Air-fry at 390°F for 7–9 minutes (flip halfway) after freezing
• Adjust cayenne for mild or extra-hot heat
• Add a drizzle of honey for sweet-heat Nashville vibes
