Light, soothing, and deeply flavorful — this ginger-infused chicken and rice soup is the perfect comfort bowl. Tender chicken, fragrant broth, soft rice, and fresh bok choy come together for a warm, healing, soul-hugging meal!
📋 ingredients:
• 1 lb chicken breast or thighs
• 1 cup jasmine or long-grain rice
• 1 small onion, diced
• 3 garlic cloves, minced
• 2–3 tbsp fresh ginger, grated
• 6 cups chicken broth
• 2 cups water
• 2–3 baby bok choy, chopped
• 2 tbsp soy sauce
• 1 tbsp sesame oil
• 1 tbsp olive oil
• 1/2 tsp black pepper
• Salt to taste
• Optional: sliced green onions, lime, or chili flakes
🥣 directions:
sauté the aromatics
Heat olive oil in a large pot over medium heat. Add onion, garlic, and ginger. Cook 2–3 minutes until fragrant.
add the chicken
Place chicken breasts or thighs into the pot. Add soy sauce, black pepper, chicken broth, and water. Bring to a simmer, cover, and cook 15–20 minutes until chicken is tender.
shred the chicken
Remove chicken, shred it with two forks, and return it to the pot.
add the rice
Stir in rice and simmer another 12–15 minutes until rice is soft and the soup thickens slightly.
add the bok choy
Add chopped bok choy and cook 2–3 minutes until wilted but still bright.
finish with flavor
Stir in sesame oil. Taste and adjust salt or soy sauce.
serve
Ladle into bowls and top with green onions, a squeeze of lime, or chili flakes for heat.
💡 tips:
• Add mushrooms or carrots for extra veggies
• Use leftover rotisserie chicken for a shortcut
• Add more water or broth if you like it soupier
• Use brown rice—just simmer longer
