This ultra-juicy, melt-in-your-mouth beef tenderloin is wrapped in herby mushroom duxelles, salty prosciutto, and flaky puff pastry. It’s a Christmas classic that looks fancy but is totally doable at home — and guaranteed to impress your whole table!
π ingredients:
• 1 whole beef tenderloin (about 2–2.5 lbs), trimmed
• Salt & black pepper
• 2 tbsp olive oil
• 1 lb mushrooms, very finely chopped
• 2 tbsp butter
• 2 cloves garlic, minced
• 2 tsp fresh thyme
• 6–8 slices prosciutto
• 2 tbsp Dijon mustard
• 1 sheet puff pastry, thawed
• 1 egg (for egg wash)
• Optional: rosemary, flaky salt, festive pastry cutouts for decoration

sear the beef
Season your tenderloin all over with salt and pepper. Heat olive oil in a hot skillet and sear the beef on all sides until deeply browned. Set aside to cool, then brush with Dijon mustard.
make the mushroom duxelles
In the same skillet, cook mushrooms in butter until all liquid evaporates. Add garlic, thyme, salt, and pepper. Cook until dry and flavorful. Cool completely — this keeps the pastry crisp!
wrap the flavor
Lay out a sheet of plastic wrap. Arrange prosciutto slices in a slightly overlapping layer. Spread the mushroom mixture over the prosciutto. Place the beef on top and roll it all tightly into a log. Refrigerate 20–30 minutes to set the shape.
pastry time
Roll out your puff pastry slightly on a floured board. Unwrap your beef log and place it in the center. Wrap pastry around it, sealing edges well. Add pastry cutouts if you want it extra Christmas-cute. Brush all over with egg wash.
bake to perfection
Bake at 400°F (200°C) for 35–45 minutes, or until pastry is golden and internal temp hits about 125–130°F for medium-rare. Rest 10 minutes before slicing.

Slice into thick, beautiful rounds and drizzle with gravy, au jus, or a creamy peppercorn sauce. It’s pure holiday magic.
