These festive stuffed shells are loaded with creamy cheese, spinach, herbs, and a rich marinara that bubbles up beautifully in the oven. They’re cozy, comforting, and perfect for Christmas dinner when you want something delicious without a ton of work. Think lasagna vibes… but easier, cheesier, and way more fun to serve!

• 1 box jumbo pasta shells
• 2 cups ricotta cheese
• 1 1/2 cups shredded mozzarella, divided
• 1/2 cup grated parmesan
• 1 egg
• 2 cups frozen spinach, thawed & squeezed dry
• 2 cups marinara sauce
• 1 tsp garlic powder
• 1 tsp Italian seasoning
• 1/2 tsp salt
• 1/2 tsp pepper
• Optional: fresh basil, crushed red pepper, pesto drizzle for topping

cook the shells
Boil jumbo shells according to package directions until just shy of al dente. Drain and let them cool so you can fill them.
mix the filling
In a bowl, combine ricotta, 1 cup mozzarella, parmesan, egg, garlic powder, Italian seasoning, salt, pepper, and the squeezed-dry spinach. Stir until creamy and well mixed.
assemble
Spread a thin layer of marinara in the bottom of a baking dish. Spoon the cheese mixture into each shell and nestle them into the sauce. Spoon the remaining marinara over the top and sprinkle with the rest of the mozzarella.
bake
Cover with foil and bake at 375°F for 25 minutes. Remove foil and bake another 10–15 minutes until the cheese is melted and bubbling with those glorious golden edges.
serve
Top with fresh basil, a sprinkle of parmesan, or even a festive swirl of pesto for that Christmas green. Serve warm and watch them disappear.
