Juicy beef tenderloin wrapped around a creamy, savory herb-cheese filling, roasted until buttery and tender, and finished with a rich pan-dripping sauce. • 1 whole beef tenderloin (about 2.5–3 lbs), trimmed and butterflied
• 1 tsp salt
• 1 tsp black pepper
• 2 tbsp olive oil
stuffing
• 6 oz cream cheese, softened
• 1/2 cup chopped spinach (fresh or thawed/frozen)
• 1/3 cup sun-dried tomatoes, chopped
• 1/3 cup crumbled feta or goat cheese
• 2 cloves garlic, minced
• 1 tbsp fresh rosemary, chopped
• 1 tbsp fresh thyme, chopped
• 1/4 tsp salt
• 1/4 tsp pepper

• 2 tbsp butter
• Optional: kitchen twine for tying

prep the beef
Lay the butterflied tenderloin flat and season both sides with salt and pepper. If the thickness is uneven, gently pound to level it out.
make the festive filling
