Soft, buttery cinnamon-roll–flavored cubes of bread, pan-fried until golden and tossed in a warm cinnamon-sugar coating. These little bites taste like mini cinnamon rolls crossed with French toast—perfect for breakfast, brunch, or snacking straight from the pan.

• 1 loaf brioche or Texas toast, cut into 1-inch cubes
• 3 large eggs
• 1 cup milk or half-and-half
• 2 tbsp melted butter
• 2 tbsp sugar
• 1 tbsp cinnamon
• 1 tsp vanilla extract
• Pinch of salt
• 2–3 tbsp butter or oil for frying
CINNAMON-SUGAR COATING
• 1/3 cup sugar
• 1 tbsp cinnamon
OPTIONAL DRIZZLE
• 1/2 cup powdered sugar
• 1–2 tbsp milk
• 1/2 tsp vanilla

Whisk eggs, milk, melted butter, sugar, cinnamon, vanilla, and salt until smooth.

Toss bread cubes in the mixture until fully coated. Let them soak 2–3 minutes.
cook
Heat butter/oil in a large skillet over medium heat.
Add soaked bread cubes in a single layer.
Cook 2–3 minutes per side until deeply golden and slightly crisp.
coat in cinnamon sugar
While warm, toss the bites in the cinnamon-sugar mixture.
make the icing drizzle (optional)
Whisk powdered sugar, milk, and vanilla until smooth. Drizzle over the bites.
