All the cheesy, saucy enchilada goodness—made in just ONE pan!

Yield: 4 servings
Ingredients:
• 1 lb ground beef
• 1 small onion, diced
• 2 cloves garlic, minced
• 1 tsp chili powder
• 1 tsp cumin
• 1 tsp paprika
• Salt & pepper to taste
• 1 can (10 oz) enchilada sauce
• 1 cup corn kernels (fresh, canned, or frozen)
• 8 small tortillas, cut into strips
• 1½ cups shredded Mexican blend cheese
• Optional toppings: fresh cilantro, diced tomatoes, sour cream
Instructions:
1. In a large skillet, cook ground beef and onion until browned. Drain extra grease.
2. Add garlic, chili powder, cumin, paprika, salt, and pepper. Cook 1 minute.
3. Pour in enchilada sauce and stir in corn.
4. Add tortilla strips and mix until coated in sauce.
5. Reduce heat to low, cover with cheese, and let melt for 5 minutes.
6. Top with tomatoes, cilantro, or your favorite garnishes.
7. Serve warm and gooey!
Pro Tip:
For extra crispiness, broil the skillet for 2–3 minutes after adding the cheese!
