Super Fresh Grilled Halloumi with Fluffy Rice, Creamy Herb Yogurt & Greek-Style Salad

Ingredients

For the Halloumi:

 200g halloumi, sliced

 1 tbsp olive oil

 Fresh dill or parsley for topping

Rice Base:

 1 cup basmati rice

 2 cups water

 Pinch of salt

Creamy Herb Yogurt:

 150g Greek-style yogurt

 1 clove garlic, finely minced

 2 tbsp chopped spinach

 1 tbsp lemon juice

 Salt & pepper

 1 tbsp dill, chopped

Simple Greek Salad:

 1/2 cucumber, sliced thin

 6–8 cherry tomatoes, halved

 1/4 red onion, sliced

 8–10 Kalamata olives

 1 tbsp olive oil

 1 tsp vinegar or lemon juice

 Fresh dill or oregano

 Salt and pepper

Directions:

Cook the rice until light and fluffy. Combine the yogurt sauce ingredients in a small bowl and chill. Mix the salad ingredients in a separate bowl. Heat a skillet with olive oil and grill the halloumi slices for a few minutes on each side until browned. Assemble the dish with rice in the center, herby yogurt on top, halloumi on one side, and salad on the other. Garnish everything with extra herbs.

Tips & Ideas:

You can replace yogurt with plant-based alternatives and use grilled tofu instead of halloumi for a vegan option. For a bit of spice, sprinkle chili flakes over the halloumi before servin
