Ingredients
For the Chicken & Veggies
6 chicken drumsticks
4 medium potatoes, diced
3 large carrots, peeled & chopped
1 red bell pepper, chopped
3 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
1 tsp dried thyme or Italian seasoning
Salt & pepper to taste
Fresh chopped parsley (for garnish)
Instructions
Preheat oven to 200°C (400°F). In a large mixing bowl, toss the drumsticks, potatoes, carrots, and bell pepper with olive oil, garlic powder, paprika, thyme, salt, and pepper until well coated. Spread everything in a single layer in a baking dish. Bake for 40–45 minutes, flipping the drumsticks once halfway through, until the chicken is golden and cooked through, and the veggies are tender. Garnish with fresh parsley before serving.
Notes & Variations
Add lemon wedges or squeeze lemon juice over the top before baking for extra flavor.
You can use sweet potatoes or parsnips instead of regular potatoes.
Swap drumsticks for chicken thighs or wings if preferred.
