SKINNY, lightened up and healthy enchilada bake!!!! Made right in the crockpot!!! So cheesy and yet guilt-free!!! INGREDIENTS 2 boneless skinless chicken breasts 1 1/4 cups chicken broth 1 cup uncooked quinoa, rinsed 1 10-ounce can enchilada sauce 1 4.5-ounce can chopped green chilies 1/2 cup corn kernels, frozen, canned or roasted 1/2 cup canned black beans, drained and rinsed 2 tablespoons chopped fresh cilantro leaves 1/2 teaspoon cumin 1/2 teaspoon chili powder Kosher salt and freshly ground black pepper, to taste 3/4 cup shredded cheddar cheese 3/4 cup shredded mozzarella cheese 1 avocado, halved, seeded, peeled and diced 1 Roma tomato, diced INSTRUCTIONS Place chicken into a 6-qt slow cooker. The Perfect Bacon & Egg Breakfast Sandwich



*Ingredients:*

2 large eggs

4 slices of crispy bacon

2 slices of bread or 1 sandwich roll

1 tbsp butter (for toasting bread)

1 slice of cheddar cheese (optional)

2 slices of tomato (optional)

1-2 lettuce leaves (optional)

Dash of hot sauce (optional)

Pinch of black pepper

Pinch of salt



*Instructions:*

1. *Cook the bacon*: Heat a skillet over medium heat. Lay the bacon slices flat in the pan and cook until crispy, about 3-4 minutes per side. Remove and drain on a paper towel.

2. *Prepare the eggs*: In the same skillet, crack the eggs and cook to your preference: sunny-side-up for a gooey yolk or scrambled for a softer texture. Season with salt and pepper.

3. *Toast the bread*: Spread butter on one side of each bread slice. Toast in a clean skillet or toaster until golden brown.

4. *Assemble the sandwich*: Layer the lettuce and tomato slices (if using) on one slice of bread. Add the bacon, cooked eggs, and cheese (optional) on top. Drizzle hot sauce if desired, then top with the second slice of bread.

5. *Serve*: Cut the sandwich in half and serve warm. Enjoy your hearty, delicious breakfast!
