SKINNY, lightened up and healthy enchilada bake!!!! Made right in the crockpot!!! So cheesy and yet guilt-free!!! INGREDIENTS 2 boneless skinless chicken breasts 1 1/4 cups chicken broth 1 cup uncooked quinoa, rinsed 1 10-ounce can enchilada sauce 1 4.5-ounce can chopped green chilies 1/2 cup corn kernels, frozen, canned or roasted 1/2 cup canned black beans, drained and rinsed 2 tablespoons chopped fresh cilantro leaves 1/2 teaspoon cumin 1/2 teaspoon chili powder Kosher salt and freshly ground black pepper, to taste 3/4 cup shredded cheddar cheese 3/4 cup shredded mozzarella cheese 1 avocado, halved, seeded, peeled and diced 1 Roma tomato, diced INSTRUCTIONS Place chicken into a 6-qt slow cooker. Stir in chicken broth, quinoa, enchilada sauce, green chiles, corn, black beans, cilantro, cumin and chili powder; season with salt and pepper, to taste. DORITO TACO SALAD


Dorito Taco Salad is a classic dish from the 80s and was a staple at potlucks for good reason. It consists of ground beef, canned beans, crispy lettuce, cheddar cheese, and of course, chips! Additionally, there are options available to make it healthier.


INGREDIENTS

1 pound (453g) lean ground beef

1 package taco seasoning

2 large heads romaine lettuce, chopped

1 small red onion, diced

1 large bell pepper, diced

1 (10oz) (283g) grape tomatoes or 2 large roma tomatoes, chopped

1 (15oz) (425g) canned black beans, drained and rinsed

4 ounces (113g) shredded cheddar cheese

1 (9.25oz) (262g) nacho flavored chips

8 ounces (235ml) Catalina dressing


INSTRUCTIONS

Brown ground beef in a large skillet until no longer pink. Drain excess grease. Stir in taco seasoning and the amount of water specified on the packet. Set aside to cool.

In a large bowl combine the lettuce, onion, bell pepper, tomatoes, beans, and cheese. Toss to combine.

Add seasoned beef, crushed chips, and dressing. Toss to combine and serve immediately.
