Doritos Taco Pasta Salad
Ingredients:
3 cups rotini pasta (cooked and cooled)
1 lb (450 g) ground beef
1 packet taco seasoning
1 cup cherry tomatoes (halved)
1 cup shredded lettuce
1 cup shredded cheddar cheese
1/2 cup crushed Doritos (nacho cheese flavor)
1/2 cup corn (optional)
1/4 cup red onion (finely chopped)
1/2 cup Catalina or French dressing
Salt and pepper to taste
Instructions:
Cook the pasta:
Boil the rotini pasta according to package instructions. Drain and let it cool completely.
Prepare the beef:
In a pan over medium heat, cook the ground beef until browned. Drain excess fat, then add taco seasoning and a little water (according to packet instructions). Cook for a few minutes, then let it cool.
Mix the salad:
In a large bowl, combine the cooked pasta, seasoned beef, cherry tomatoes, lettuce, corn, onion, and shredded cheese.
Add dressing:
Pour in the dressing and mix well until everything is coated.
Add Doritos:
Just before serving, gently fold in the crushed Doritos to keep them crunchy.
Serve:
Taste and adjust salt and pepper if needed. Serve chilled or at room temperature.
Tip:
Add avocado, black beans, or a squeeze of lime for extra flavor!
