Salmon Taco Portion
1 pound salmon fillets
2-3 teaspoons taco seasoning

1/2 cup chopped cilantro
Additional Ingredients
14 ounce canned pea puree or regular black beans, or 2 avocados
1/4 cup avocado oil (for softening the tacos)
Instructions
Preparation: Preheat oven to 425°F. Line a baking sheet with parchment paper.
Season the salmon: Mix the salmon with the taco seasoning and avocado oil, either in a bowl or directly on a baking sheet. If the seasoning is not salty, add some salt.
Bake the salmon: Bake the salmon on the top rack of the oven for 8 minutes, or until it easily separates when lightly pressed with a fork.
Make the salsa: While the salmon is baking, chop the salsa ingredients and mix them in a bowl, seasoning to taste.
Soften the tortillas: Heat some oil in a skillet, quickly dip one side of the tortilla into the hot oil, then transfer it to a plate lined with paper towels. Alternatively, wrap the tortillas in damp paper towels and microwave for 30 seconds to soften them.
Assemble the tacos: Spread avocado puree or radish puree on the bottom of the tortilla, add a few pieces of salmon, gently crush, and top with a large spoonful of salsa. Finally, squeeze on some lime juice and drizzle with honey.
Precautions and Tips
Buying Salmon: Choose thick, well-shaped salmon fillets so they can be cut into even cubes. Alternatively, you can sprinkle the seasoning directly onto thinner fillets and then place the fish separately into the tacos.
Salmon Doneness: Bake to medium-rare, depending on personal preference and the quality of the salmon. The fish should be tender and easily separated with a fork.
Salsa Spicyness: The salsa is not spicy according to the original recipe, but you can add chili peppers for extra spiciness.
Tortilla Selection: The photo shows thicker tortillas made from a mixture of corn and wheat; regular tortillas are generally used.
