Taco Filling:
1 pound (about 450g) minced chicken, turkey, or pork
3 tablespoons soy sauce
1 tablespoon chili crisp
1 tablespoon minced garlic (or 2 cloves of garlic, minced)
1 tablespoon minced ginger (or half an inch of ginger, minced)
1 cup cabbage and carrot mixture (or store-bought salad dressing or mixed salad dressing)
Tacos:
6-8 small flour tacos (Mission Street Taco brand tacos recommended)
2-3 tablespoons avocado oil or toasted sesame oil
Toppings:
More fresh cabbage/carrot mixture
Fresh cilantro or green onions
Chili crisp
Gochujang (Korean chili paste)
Instructions
Making the Filling: Combine the minced meat, soy sauce, chili crisp, minced garlic, minced ginger, and vegetables together and mix thoroughly by hand.
Spreading the Filling: Spread the filling evenly on one side of the tacos. It is recommended to fill all the tortilla fillings at once.
Cooking the Tacos: Heat a skillet over medium-high heat and add oil.
Place the tacos in the skillet in batches, filling side down, and cook for 3-4 minutes until golden brown.
Flip them over and cook for 1 minute until lightly browned.
Flip them one last time, ensuring the filling side is completely cooked through (chicken and turkey should reach 165°F, pork should reach 160°F).
Plate and Enjoy: Top the tacos with more fresh cabbage, cilantro, or green onions, and your choice of sauce. Fold in half and enjoy—it tastes similar to a folded sandwich made with egg rolls.
