### Ingredients
**Base:**
* **1 cup** Raw cashews (or almonds)
* **1 cup** Medjool dates, pitted (ensure they are soft)
* **½ cup** Unsweetened shredded coconut, plus more for rolling
**Flavor & Binding:**
* **1** Large lime, zested and juiced
* **1 tbsp** Coconut oil, melted
* **½ tsp** Vanilla extract (optional)
* **Pinch** of salt

### 1. Blend the Base
1. Place the **nuts** in a food processor and pulse until they are finely chopped.
2. Add the **pitted dates**, **shredded coconut**, **lime zest**, **lime juice**, **coconut oil**, **vanilla**, and **salt**.
3. Process on high until the mixture forms a sticky "dough" that sticks together when pinched. If it feels too dry, add another teaspoon of lime juice or melted coconut oil.
### 2. Roll and Chill
1. Scoop the mixture using a tablespoon or a small cookie scoop.
2. Roll into balls using your palms.
3. **Optional:** Roll the finished balls in extra **shredded coconut** for a nice coating.
### 3. Set
Place the bites on a parchment-lined baking sheet or container and **refrigerate for at least 30 minutes** to firm up before eating.
