## 3. Pan-Seared Calamari
* **1 lb Calamari Tubes & Tentacles**, cleaned
* **1 tbsp Olive Oil or Vegetable Oil**
* **Salt and Black Pepper**
**Instructions:**
1. **Prep:** Pat the calamari **extremely dry** with paper towels. Slice tubes into ½-inch rings. Tentacles can be left whole or halved. Season lightly with salt and pepper.
2. **Heat:** Heat a large cast-iron skillet or wok over **high heat** until smoking. Add the oil.
3. **Sear:** Add the calamari in a single layer (work in batches if needed to avoid overcrowding). Sear for **90 seconds to 2 minutes total**. Do not overcook, or it will become rubbery.
4. **Glaze:** In the last **30 seconds** of cooking, pour the **Gochujang Teriyaki Glaze** into the pan. Toss quickly to coat the calamari thoroughly.
5. **Remove:** Immediately transfer to a serving platter.
