Ingredients:
4 salmon fillets (about 6 oz each)
1 cup fresh pineapple chunks (or canned, drained)
3 tbsp honey
3 tbsp soy sauce
2 tbsp fresh lime juice
2 cloves garlic, minced
1 tbsp olive oil
1/2 tsp chili flakes (optional, for a little heat)
Salt and pepper to taste
Fresh cilantro or green onions for garnish
Directions:
1. Preheat your oven to 375°F. Line a baking sheet with foil for easy cleanup.
2. In a small bowl, whisk together the honey, soy sauce, lime juice, garlic, and chili flakes (if using).
3. Pat the salmon dry. Place the fillets on the prepared baking sheet, brush with olive oil, and season both sides with salt and pepper.
4. Brush the salmon generously with the honey mixture.
5. Scatter the pineapple chunks around the salmon and drizzle any remaining sauce over the top.
6. Bake for 12-15 minutes, or until the salmon flakes easily with a fork and the pineapple is lightly caramelized.
7. Garnish with fresh cilantro or green onions and serve immediately.
