This layered rice stack is the perfect balance of sweet-savory teriyaki chicken, creamy avocado, and fluffy rice. It looks fancy, tastes incredible, and comes together easily for lunch, dinner, or meal prep.
📋 ingredients:
teriyaki chicken
• 1 lb chicken breast or thighs, diced
• 1/3 cup teriyaki sauce (store-bought or homemade)
• 1 tbsp soy sauce
• 1 tsp sesame oil
• 1 clove garlic, minced
• 1 tsp grated fresh ginger (optional)
rice & layers
• 2 cups cooked jasmine or short-grain rice
• 1 tbsp rice vinegar
• 1/2 tsp sugar
• Salt, to taste
• 2 ripe avocados, diced
• 1 tbsp fresh lemon or lime juice
• Salt & pepper, to taste
garnish (optional but recommended)
• Sesame seeds
• Sliced green onions
• Drizzle of extra teriyaki or spicy mayo
🥣 directions:
cook the chicken
Heat a skillet over medium-high heat.
Add chicken and cook until lightly browned and cooked through.
Stir in garlic, ginger, soy sauce, sesame oil, and teriyaki sauce.
Simmer 2–3 minutes until glossy and slightly thickened. Remove from heat.
season the rice
In a bowl, mix warm rice with rice vinegar, sugar, and a pinch of salt. Fluff gently.
prep the avocado
Toss diced avocado with lemon or lime juice, salt, and pepper to prevent browning.
assemble the stacks
Lightly oil a measuring cup or food ring.
Press seasoned rice into the bottom.
Add a layer of avocado, gently pressing down.
Top with teriyaki chicken.
Carefully invert onto a plate and remove mold.
finish & serve
Garnish with sesame seeds, green onions, and an extra drizzle of sauce if desired. Serve warm or slightly chilled.
