Hearty and Flavorful Taco Soup Made Easy in Your Crockpot
Ingredients:
1 pound ground beef (or turkey)
1 onion, chopped
2 cloves garlic, minced
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) corn, drained
1 can (28 oz) diced tomatoes
1 can (10 oz) diced tomatoes with green chilies
1 packet taco seasoning
1 cup beef broth
Salt and pepper to taste
Optional toppings: shredded cheese, sour cream, avocado, cilantro, tortilla chips
Directions:
In a skillet over medium heat, brown the ground beef (or turkey) along with the chopped onion and minced garlic until the meat is fully cooked. Drain any excess fat.
Transfer the cooked meat mixture to the crockpot.
Add the black beans, kidney beans, corn, diced tomatoes, diced tomatoes with green chilies, taco seasoning, and beef broth to the crockpot. Stir well to combine all ingredients.
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the flavors meld together and the soup is heated through.
Taste and adjust seasoning with salt and pepper as needed.
Serve hot, garnished with your choice of toppings such as shredded cheese, sour cream, avocado, cilantro, and tortilla chips.
