Slow Cooker Pot Roast & Veggies

 Ingredients:

3–4 lbs chuck roast (boneless beef)

1 tbsp olive oil

Salt and black pepper (to taste)

1 tsp garlic powder

1 tsp onion powder

1 tsp Italian seasoning

1 packet dry ranch dressing mix (optional kick!)

1 packet brown gravy mix

1 cup beef broth

1 tbsp Worcestershire sauce

4–5 large carrots, chopped into chunks

3–4 Yukon gold potatoes, chopped

1 medium onion, chopped

Fresh or dried parsley (for garnish)

Mashed potatoes (for serving – buttery and creamy!)

 How to Make It:

 Sear That Roast First!

Heat olive oil in a skillet over medium-high heat. Season the beef with salt, pepper, garlic powder, and onion powder. Sear each side for 2–3 minutes until browned—this step adds deep flavor for your best cozy dinner yet!

 Veggie Bed Setup

In your slow cooker, toss in chopped carrots, potatoes, and onion. These will soak up all that rich beefy juice for the ultimate hearty comfort meal.

 Lay the Roast on Top

Place the seared chuck roast on top of the veggies. Sprinkle ranch mix and gravy mix over everything—this combo brings bold flavor explosion with minimal effort!

 Add Liquids & Let it Go

Pour in beef broth and Worcestershire sauce. Cover and cook on LOW for 8–10 hours or HIGH for 4–6 hours. The meat should shred effortlessly and the veggies will be ultra tender—easy family dinner perfection!

 Plate & Serve It Up
