for the salmon patties
• 2 cans (14–15 oz) salmon, drained and flaked
• 1/2 cup breadcrumbs
• 1/4 cup finely chopped onion
• 1 egg
• 1 tsp Dijon mustard
• 1/2 tsp garlic powder
• Salt & pepper to taste
• 2–3 tbsp oil for frying
for the grits
• 1 cup quick-cooking grits
• 4 cups water or milk
• 2 tbsp butter
• Salt to taste
for the cheesy eggs
• 4 eggs
• 1/4 cup shredded cheddar or your favorite cheese
• 1 tbsp milk or cream
• Salt & pepper to taste

prepare the grits
In a saucepan, bring water or milk to a boil. Stir in grits and salt, cook according to package instructions until creamy. Stir in butter at the end.
make the salmon patties
In a bowl, combine flaked salmon, breadcrumbs, onion, egg, mustard, garlic powder, salt, and pepper. Mix until well combined.
Form into small patties.
Heat oil in a skillet over medium heat and fry patties 3–4 minutes per side until golden and crispy. Drain on paper towels.
cook the cheesy eggs
Whisk eggs with milk, salt, and pepper.
Cook in a non-stick skillet over medium-low heat, stirring gently. When eggs start to set, sprinkle in cheese and fold until creamy and melted.
assemble
Spoon creamy grits onto plates. Top with salmon patties and cheesy eggs. Serve hot with optional hot sauce or fresh herbs.
