This refreshing, zesty seafood dish is perfect for parties, holidays, or anytime you want a cool appetizer with BIG flavor. Citrusy, herby, slightly spicy, and incredibly addictive — these shrimp soak up the marinade and get better by the hour!
π ingredients:
• 1 1/2 lbs cooked shrimp, peeled & deveined
• 1 small red onion, thinly sliced
• 2 lemons, thinly sliced
• 2–3 garlic cloves, thinly sliced
• 1/4 cup fresh parsley, chopped
• 2 tsp black peppercorns
• 2 tsp celery seeds
• 1 tsp crushed red pepper flakes
• 2 bay leaves
for the marinade:
• 1 cup olive oil
• 1/2 cup white vinegar
• 1/2 cup apple cider vinegar
• 1 tbsp Dijon mustard
• 1 tsp sugar
• 1 tsp salt

build the layers
In a large glass jar or container, layer the shrimp with onions, lemon slices, garlic, and parsley. Sprinkle in peppercorns, celery seeds, red pepper flakes, and bay leaves as you go.
whisk the marinade
In a bowl, whisk together olive oil, both vinegars, Dijon, sugar, and salt until smooth and emulsified.
pour & chill
Pour the marinade over the shrimp mixture until everything is completely covered. Seal and refrigerate for at least 6 hours — overnight is even better for maximum flavor.
serve
Serve chilled as an appetizer, with crackers, in salads, or straight from the jar. The flavor gets brighter and bolder the longer it sits!
