Caramelized onions, buttery broth, toasted bread, and melty cheese… this classic French onion soup is pure comfort in a bowl. Deep flavor, simple ingredients, and that irresistible cheesy top!
π ingredients:
• 4 large yellow onions, thinly sliced
• 3 tbsp butter
• 1 tbsp olive oil
• 3 cloves garlic, minced
• 1 tsp sugar (helps caramelize)
• 1/2 tsp salt
• 1/2 tsp black pepper
• 1 tbsp flour
• 1/2 cup white wine (optional but delicious)
• 6 cups beef broth
• 1 tsp Worcestershire
• 1–2 tsp fresh thyme or 1/2 tsp dried
• 1 bay leaf
For topping
• French bread slices, toasted
• 1–2 cups shredded GruyΓ¨re or mozzarella

caramelize the onions
In a large pot, melt butter with olive oil.
Add sliced onions, salt, pepper, and sugar.
Cook on medium-low, stirring often, for 25–35 minutes until deep golden brown.
add garlic & flour
Stir in garlic and cook 1 minute.
Sprinkle flour and cook another minute to thicken.
deglaze
Pour in white wine to lift all the browned bits (skip if not using).
Let it simmer for 2–3 minutes.
build the soup
Add beef broth, Worcestershire, thyme, and bay leaf.
Simmer 20 minutes for rich flavor.
prepare the cheesy topping
Toast baguette slices.
Ladle soup into oven-safe bowls.
Top each with bread and a heavy handful of cheese.
broil
Place bowls under the broiler for 2–4 minutes until bubbly and golden.
serve
Let cool slightly (it’s hot!) and enjoy the deep oniony, cheesy goodness.
