This cozy pot of goodness is loaded with tender ground beef, soft pinto beans, smoky green chiles, and warm spices. It’s rich, filling, and perfect for chilly nights when you want something satisfying with a little Southwestern kick!
π ingredients:
• 1 lb ground beef
• 1 small onion, diced
• 3 cloves garlic, minced
• 1 tsp cumin
• 1 tsp chili powder
• 1/2 tsp smoked paprika
• Salt & pepper to taste
• 1 (15 oz) can pinto beans, drained & rinsed
• 1 (10 oz) can diced green chiles (mild or hot)
• 1 (14 oz) can diced tomatoes
• 4 cups beef broth
• 1 tbsp tomato paste
• 1/2 tsp oregano
• Optional: 1 jalapeΓ±o, diced for extra heat
• Optional: 1 cup corn (fresh, frozen, or canned)
For topping
• Shredded cheddar
• Chopped cilantro
• Sour cream
• Lime wedges

brown the beef
In a large pot, cook ground beef until browned.
Add onion and garlic; cook until soft. Season with cumin, chili powder, paprika, salt, and pepper.
build the soup
Stir in tomato paste and cook 1 minute.
Add pinto beans, green chiles, diced tomatoes, beef broth, oregano, and jalapeΓ±o or corn if using.
simmer
Bring to a boil, then reduce heat and simmer 20–25 minutes so the flavors deepen.
finish & serve
Taste and adjust seasoning.
Ladle into bowls and top with cheddar, cilantro, sour cream, and a squeeze of lime.
