Ingredients
Protein & Veggies:
2 diced chicken breasts
1 tbsp olive oil
1 red and 1 yellow bell pepper, sliced
1 sliced onion
2 garlic cloves, chopped
1 tsp smoked paprika
Salt, pepper, chili flakes (optional)
Creamy Sauce:
150 ml cream or coconut cream
50 ml stock
1 tsp mustard or curry paste
Dried herbs (thyme or Italian mix)
Rice:
120g jasmine or basmati rice
250 ml water

Method
Cook rice with salted water, simmering until fluffy.
Sear the seasoned chicken in a skillet until browned.
Add onions and peppers; sautรฉ until soft.
Stir in cream, stock, and herbs. Simmer to thicken.
Serve rice with the creamy chicken mix and garnish with parsley.
