Ingredients:

For the salad:

4 cups fresh broccoli florets (about 1 large head)

1 cup blueberries (fresh or frozen)

1/2 cup shredded carrots

1/4 cup red onion, thinly sliced

1/4 cup sunflower seeds or chopped nuts (optional)

For the poppyseed ranch dressing:

1/2 cup ranch dressing (store-bought or homemade)

1 tablespoon poppy seeds

1 tablespoon honey or maple syrup (optional for sweetness)

1 tablespoon apple cider vinegar or lemon juice

Salt and pepper to taste

Preparation:

Prepare the salad: In a large bowl, combine the broccoli florets, blueberries, shredded carrots, and red onion. Toss gently to mix.

Make the dressing: In a small bowl, whisk together the ranch dressing, poppy seeds, honey (if using), apple cider vinegar (or lemon juice), salt, and pepper until smooth and well combined.

Toss the salad: Pour the poppyseed ranch dressing over the salad and toss to coat evenly. Add sunflower seeds or chopped nuts for extra crunch, if desired.
