Ingredients:
2 cups shredded sweetened coconut (plus extra for rolling)
1 ½ cups powdered sugar
½ cup unsalted butter, softened
½ cup sweetened condensed milk
1 teaspoon vanilla extract
¼ teaspoon salt
Rainbow sprinkles (optional, for decoration)
Directions:
Prepare the Mixture:
In a large mixing bowl, beat together the softened butter and sweetened condensed milk until smooth and creamy.
Add Dry Ingredients:
Stir in powdered sugar, vanilla extract, and salt. Mix until fully combined. Gradually fold in shredded coconut until the mixture becomes thick and sticky enough to shape.
Form the Balls:
Scoop out about 1 tablespoon of the mixture and roll it between your palms to form a smooth ball. Repeat until all the mixture is used.
Coat with Coconut:
Roll each ball in extra shredded coconut until evenly coated. For a festive touch, sprinkle rainbow sprinkles over the top while the surface is still slightly sticky.
Chill to Set:
Place the coconut balls on a parchment-lined tray and refrigerate for 1–2 hours, or until firm.
Serve and Enjoy:
Serve chilled or at room temperature. Store any leftovers in an airtight container in the refrigerator for up to 5 days.
