ingredients:
• 1 tbsp sugar
• 2 tsp instant yeast
• 1 tsp salt
• 3/4 cup warm water (about 110°F)
• 1/4 cup olive oil, plus more for greasing
• 2 cloves garlic, minced
• 1 tbsp fresh rosemary, finely chopped
• Flaky sea salt, for topping

make the dough
In a bowl, mix flour, sugar, yeast, and salt.
Add warm water and olive oil. Stir until a sticky dough forms.
first rise
Cover and let rise in a warm spot for 30–40 minutes, until doubled.
prep the pan
Generously oil a muffin tin. Spoon dough evenly into each cup (about 3/4 full).
flavor & dimple
Drizzle tops with olive oil.
Use your fingers to gently dimple the dough.
Sprinkle with garlic, rosemary, flaky salt, and any optional add-ins.
second rise
Let muffins rest 15 minutes while oven preheats.
bake
Preheat oven to 400°F (205°C).
Bake 18–22 minutes until golden brown and crisp on top.
