• 4 large eggs
• 1 cup cottage cheese
• 1 cup fresh spinach, chopped (or thawed frozen spinach, well drained)
• 1/2 cup shredded mozzarella or Swiss cheese
• 1/4 cup grated Parmesan cheese
• 1 small onion, finely diced
• 1 clove garlic, minced
• 1/2 tsp salt
• 1/4 tsp black pepper
• 1/4 tsp nutmeg (optional)
• Cooking spray or olive oil for greasing

Grease a 9-inch pie dish or baking dish.
