Ingredients (makes 6 donuts):
½ cup coconut flour
¼ cup vanilla protein powder
3 large eggs
¼ cup plain Greek yogurt
¼ cup unsweetened almond milk
3 tablespoons honey
1 teaspoon vanilla extract
1 teaspoon baking powder
Pinch of salt
For Glaze (optional):
¼ cup Greek yogurt
1 tablespoon honey
½ teaspoon vanilla extract
Instructions:
Preheat: Preheat oven to 350°F (175°C). Grease a 6-cavity donut pan.
Mix: Whisk together all donut ingredients until smooth batter forms.
Fill: Pour batter into donut pan, filling each cavity about ¾ full.
Bake: Bake for 15-18 minutes until golden and springy to touch.
Cool: Let cool in pan for 5 minutes, then transfer to wire rack.
Glaze: Mix glaze ingredients and drizzle over cooled donuts if desired.
