Sweet & Savory Chicken Stir-Fry with Veggies & Fluffy Rice πŸ—πŸ₯•πŸŒ½


A vibrant, flavor-packed plate featuring tender chicken pieces, sautΓ©ed vegetables, sweet pops of corn, and a drizzle of sweet chili sauce over warm white rice. Fresh, simple, and perfect for an easy weeknight dinner!

𝐈𝐧𝐠𝐫𝐞𝐝𝐒𝐞𝐧𝐭𝐬

For the Chicken

1 lb chicken breast, diced

1 tbsp oil

½ tsp garlic powder

½ tsp paprika

½ tsp black pepper

Salt to taste

For the Veggie Mix

1 cup sliced mushrooms

½ red bell pepper, diced

½ cup sweet corn

1 small onion, sliced

2 green onions, chopped

1 tbsp oil

Salt & pepper

For the Sauce

2–3 tbsp sweet chili sauce (or your favorite sweet & spicy sauce)

Optional: 1 tsp soy sauce for depth

For the Rice

1 cup white rice

2 cups water

Pinch of salt

1. Cook the Rice

Rinse rice until the water runs clear.

Add rice, water, and salt to a pot.

Bring to a boil, then reduce heat to low, cover, and cook 15 minutes.

Turn off heat and let it steam 5 minutes.

2. Cook the Chicken

Season chicken with garlic powder, paprika, pepper, and salt.

Heat oil in a pan and cook chicken until golden and fully cooked (6–8 minutes).

Remove and set aside.

3. SautΓ© the Veggies

In the same pan, add oil if needed.

SautΓ© onions and peppers for 2 minutes.

Add mushrooms, corn, and green onions.

Cook 3–4 minutes and season with salt and pepper.

4. Combine & Sauce

Return chicken to the pan with the veggies.

Drizzle sweet chili sauce (and soy sauce if using).

Toss until everything is coated and heated through.

5. Plate

Serve the stir-fry next to warm rice and add a final drizzle of sweet chili sauce over the chicken.
