Ingredients:
1 ½ lbs chicken breasts, cut into bite-size pieces
2 tbsp olive oil
4 garlic cloves, minced
Zest of 1 lemon
Juice of 1 lemon
1 tsp Italian seasoning
½ tsp paprika
Salt & pepper to taste
1–2 tbsp butter
Optional garnish: chopped parsley, extra lemon wedges
Directions:
Season chicken pieces with salt, pepper, Italian seasoning, paprika, lemon zest, and half of the minced garlic.
Heat olive oil in a large skillet over medium-high heat.
Add chicken and cook 5–7 minutes until golden and cooked through.
Lower heat and add butter, remaining garlic, and lemon juice.
Toss chicken until coated in the lemon-garlic butter sauce, about 1–2 minutes.
Garnish with parsley and serve with rice, potatoes, or veggies.
