This vibrant salad combines fresh vegetables, fruits, and boiled eggs for a refreshing and nutritious meal!
Ingredients:
3 boiled eggs (peeled and halved)
1 cup lettuce leaves (washed and chopped)
1/2 cup cucumber slices
1/2 cup cherry tomatoes (or diced tomatoes)
1/2 cup apple chunks
1/2 cup mango chunks
1/2 cup mandarin orange segments
1/4 cup thinly sliced red onion
Dressing:
2 tbsp olive oil
1 tbsp lemon juice
1 tsp honey
1/2 tsp salt & black pepper
Instructions:
Prepare the ingredients: Boil the eggs, peel them, and cut them in half. Wash and chop the lettuce, cucumber, and fruits.
Assemble the salad: In a large bowl, layer the lettuce, cucumber, tomatoes, apples, mango, oranges, and red onions.
Add the eggs: Place the boiled eggs on top.
Make the dressing: In a small bowl, whisk together olive oil, lemon juice, honey, salt, and black pepper.
