This salad is perfect for a light lunch or as a delicious side dish!

Ingredients:

• 2 medium cucumbers, thinly sliced  

• 2 medium cooked beetroots, diced  

• 1/2 red onion, thinly sliced  

• 1/4 cup fresh parsley, chopped

Crisp Cucumber and Beetroot Salad


Ingredients:

2 medium cucumbers, thinly sliced

2 medium cooked beetroots, diced

1/2 red onion, thinly sliced

1/4 cup fresh parsley, chopped

2 tablespoons olive oil

1 tablespoon lemon juice

1 teaspoon Dijon mustard

Salt and pepper to taste


Instructions:

Combine Ingredients: In a large bowl, combine the cucumber, beetroot, red onion, and parsley.

Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper.

Toss the Salad: Pour the dressing over the salad and toss to coat evenly.

Serve: Serve immediately or chill for later.


Tips:

For a more vibrant color, you can use golden beets instead of red beets.

Add a handful of crumbled feta cheese for a salty, tangy flavor.

For a crunchier salad, add some toasted nuts or seeds.
