Ingredients:
2 eggs
1 avocado, sliced
100g smoked salmon
1 tbsp olive oil or butter
Salt & black pepper, to taste
Fresh parsley or dill, chopped (for garnish)
Instructions:
1. Heat olive oil or butter in a non-stick pan over medium heat.
2. Crack eggs into the pan and cook sunny-side-up until whites are set but yolks are still runny. Season with salt and pepper.
3. Arrange avocado slices and smoked salmon on a plate.
4. Place the eggs beside them, sprinkle with chopped parsley or dill, and add extra pepper if desired.
5. Serve immediately for a protein-rich, healthy breakfast.
