Ingredients:
1 ripe avocado, diced
1/4 red onion, thinly sliced
2 cups mixed greens (like arugula and lettuce)
1 tbsp fresh parsley or cilantro, chopped
1 tbsp olive oil
1 tbsp lemon juice
Salt & pepper to taste
Instructions:
1. Combine greens, avocado, tomato, and onion in a bowl.
2. Drizzle with olive oil and lemon juice.
3. Sprinkle parsley, salt, and pepper.
4. Toss gently and serve fresh.
