Avocado Chicken Salad


This fresh & flavorful salad is packed with protein and healthy fats! Perfect for meal prep or a quick lunch.

Ingredients:

2 cooked chicken breasts, diced
1 avocado, sliced
2 cups romaine or mixed greens
1/4 cup chopped red bell pepper
2 tbsp chopped cilantro
1 tbsp olive oil
1 tbsp lemon juice
1 tsp Dijon mustard
1/2 tsp garlic powder
Salt & pepper to taste

Instructions:

In a large bowl, toss greens, chicken, avocado, bell pepper & cilantro.
Whisk together olive oil, lemon juice, mustard, garlic powder, salt & pepper.
Drizzle over salad & toss to combine.
Enjoy fresh!
