Ingredients:
For the Steak:
1 lb skirt or flank steak
2 tbsp olive oil
2 garlic cloves, minced
1 tsp smoked paprika
1 tsp cumin
Salt and pepper to taste
For the Salsa:
2 cups diced tomatoes
1 cup diced zucchini
1/4 cup diced red onion
1 tbsp olive oil
1 tbsp lime juice
1/4 cup chopped cilantro
Salt and pepper to taste
Instructions:
Marinate the Steak:
In a small bowl, mix olive oil, garlic, smoked paprika, cumin, salt, and pepper. Rub this mixture over the steak and let it marinate for at least 30 minutes.
Prepare the Salsa:
Combine tomatoes, zucchini, red onion, olive oil, lime juice, and cilantro in a bowl. Season with salt and pepper. Mix well and set aside to let the flavors meld.
Grill the Steak:
Preheat your grill to high heat. Grill the steak for about 3–4 minutes per side for medium-rare, or adjust cooking time to your preference. Remove from the grill and let it rest for 5 minutes before slicing.
Assemble and Serve:
Slice the steak thinly against the grain and serve alongside the fresh tomato salsa. Garnish with extra cilantro and edible flowers for a stunning presentation.
