INGREDIENTS 2 boneless skinless chicken breasts 1 1/4 cups chicken broth 1 cup uncooked quinoa, rinsed 1 10-ounce can enchilada sauce 1 4.5-ounce can chopped green chilies 1/2 cup corn kernels, frozen, canned or roasted 1/2 cup canned black beans, drained and rinsed 2 tablespoons chopped fresh cilantro leaves 1/2 teaspoon cumin 1/2 teaspoon chili powder Kosher salt and freshly ground black pepper, to taste 3/4 cup shredded cheddar cheese 3/4 cup shredded mozzarella cheese 1 avocado, halved, seeded, peeled and diced 1 Roma tomato, diced INSTRUCTIONS Place chicken into a 6-qt slow cooker. **Ingredients:**

- 16 oz. box of your favorite spaghetti noodles

- 1 lb. of savory ground meat

- A pinch of salt to taste

- A sprinkle of oregano and garlic powder (½ tspn each)

- ½ cup of creamy milk

- ¼ cup of freshly grated Parmesan cheese

- 1 egg

- 2 ounces of your favorite pepperoni (Turkey pepperoni is my top pick!)

- 1 jar (26 ounces) of tangy pasta sauce

- 1 can (16 oz.) of diced Italian style tomatoes

- 1 package (8 ounce) of shredded Italian cheese blend

- Optional: Your most-loved pizza toppings, such as black olives, sausage, onions, or green peppers. Go wild!

**Step-by-step Guide:**

1. Set a pot ablaze with water and salt, and toss in the spaghetti noodles once it starts boiling. In the meantime, brown your meat in a separate pan. Once the noodles are tender, strain them and transfer to a casserole dish.

2. Grab a bowl and combine milk and egg, whisking it into a smooth blend. Pour this creamy concoction over the pasta, then add the pasta sauce, diced tomatoes, garlic powder, and oregano. Stir it up, letting all the flavors mingle.

3. Now, let's layer up! Start with your savory ground meat, followed by a layer of your chosen pepperoni. Now, sprinkle the Parmesan cheese and Italian cheese, and then add another layer of pepperoni. 

4. Preheat your oven to 350°F (175°C) and let your masterpiece bake for 30 minutes, or until the cheese is melted and slightly golden.
