SKINNY, lightened up and healthy enchilada bake!!!! Made right in the crockpot!!! So cheesy and yet guilt-free!!! INGREDIENTS 2 boneless skinless chicken breasts 1 1/4 cups chicken broth 1 cup uncooked quinoa, rinsed 1 10-ounce can enchilada sauce 1 4.5-ounce can chopped green chilies 1/2 cup corn kernels, frozen, canned or roasted 1/2 cup canned black beans, drained and rinsed 2 tablespoons chopped fresh cilantro leaves 1/2 teaspoon cumin 1/2 teaspoon chili powder Kosher salt and freshly ground black pepper, to taste 3/4 cup shredded cheddar cheese 3/4 cup shredded mozzarella cheese 1 avocado, halved, seeded, peeled and diced 1 Roma tomato, diced INSTRUCTIONS Place chicken into a 6-qt slow cooker. Country Ranch Green Beans and Potatoes with Chicken Sausage


Ingredients:

1 lb fresh green beans, trimmed and cut into bite-sized pieces

4 cups baby potatoes (or 4 large potatoes, peeled and diced)

6 oz chicken sausage, sliced (or your choice of sausage)

1 onion, diced

2 cloves garlic, minced

1 packet (1 oz) ranch seasoning mix

1 cup chicken broth

1/2 teaspoon dried thyme

1/2 teaspoon dried rosemary

Salt and pepper, to taste

2 tablespoons olive oil (optional, if needed)

Instructions:

Prepare the Potatoes: If using large potatoes, peel and dice them into bite-sized pieces. If using baby potatoes, leave them whole or halve them if they’re larger.

Cook the Potatoes: In a large pot, add the potatoes and cover them with water. Bring to a boil and cook for about 10-12 minutes until just tender. Drain and set aside.

Sauté the Sausage: In a large skillet over medium heat, add the chicken sausage slices. Cook for about 5-7 minutes until browned. Remove the sausage and set aside.

Sauté Vegetables: In the same skillet, add a little olive oil if needed. Add the diced onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for another minute until fragrant.

Combine Ingredients: Return the sausage to the skillet. Add the cooked potatoes, green beans, ranch seasoning mix, chicken broth, thyme, and rosemary. Stir to combine.

Simmer: Bring the mixture to a simmer. Cover and cook for about 10-15 minutes, until the green beans are tender and the flavors are melded. Stir occasionally. Season with salt and pepper to taste.
