**Mini Blackberry (Mûre) & Lavender Cheesecakes**
## The Components
* **The Crust:** Buttery Graham Cracker or Digestive Biscuit.
* **The Filling:** Silky Lavender-infused Cream Cheese.
* **The Topping:** Fresh Blackberry Coulis.

### 1. The Lavender Crust
* **150g** Graham Crackers (crushed)
* **50g** Unsalted butter (melted)
* **1 tsp** Dried culinary lavender (finely ground with the crackers)
**Method:** Mix the crumbs, ground lavender, and butter. Press about 1 tablespoon into the bottom of each muffin liner. Bake at **325°F (160°C)** for 5 minutes just to set. Let cool.
### 2. The Lavender-Infused Filling
* **450g (2 blocks)** Full-fat cream cheese (room temperature)
* **100g** Granulated sugar
* **2** Large eggs
* **60ml** Sour cream or heavy cream
* **1 tsp** Vanilla extract
* **1/2 tsp** Culinary lavender (infused into the cream)
**Method:** 1. Warm the sour cream/heavy cream slightly and steep the lavender in it for 10 minutes, then strain out the buds.
2. Beat the cream cheese and sugar until smooth (don't over-airate).
3. Add eggs one at a time, then stir in the lavender-infused cream and vanilla.
4. Pour over the crusts, filling about 3/4 of the way up.
### 3. The Blackberry (Mûre) Swirl
* **150g** Fresh or frozen blackberries
* **2 tbsp** Sugar
* **1 tsp** Lemon juice
**Method:** Simmer the berries and sugar in a small pan until they break down. Mash and strain through a fine-mesh sieve to remove seeds. Drop 3 small dots of this sauce onto each unbaked cheesecake and use a toothpick to swirl.

## The Bake & Chill
1. **Bake:** At **300°F (150°C)** for 18–22 minutes. They should still have a slight "jiggle" in the center.
2. **Cool:** Let them cool to room temperature in the pan, then refrigerate for at least **4 hours** (or overnight). Cold is the secret to a clean peel from the paper liners.

## 3 Finishing Touches for "Art Style" Plating
* **Fresh Garnish:** A single fresh blackberry and a tiny sprig of fresh lavender on top.
* **Texture:** A sprinkle of "honeycomb" toffee or white chocolate shavings.
* **The Plate:** Draw a thin line of the remaining blackberry coulis across a dark plate before placing the cheesecake.
