## 1. Structured Kale & Bacon Terrine (Elegant App)
This method uses gelatin to create a firm cylinder that can be sliced into perfect rounds.
### Ingredients
* **Kale:** 1 large bunch, stemmed and blanched.
* **Bacon:** 8-10 slices, cooked until *just* pliable (not crispy).
* **Binding Agent:** 2 tsp unflavored gelatin powder dissolved in cup warm chicken stock.
* **Mousse/Filling:**
* 1 cup ricotta cheese or heavy cream.
* 1 tsp garlic powder.
* Salt and black pepper to taste.
### Instructions
1. **Prep the Components:** Blanch the kale in boiling water for 1 minute, then shock in ice water. Squeeze out **all** excess moisture and chop finely.
2. **Make the Filling:** Mix the ricotta/cream, garlic powder, salt, and pepper. Fold in the finely chopped kale. Stir in the dissolved gelatin mixture.
3. **Mold the Cylinder:** Line a cylindrical mold (or a small, narrow loaf pan) with plastic wrap, leaving overhang.
4. **Assemble:** Arrange the pliable bacon strips across the bottom and up the sides of the mold, overlapping slightly. Fill the center with the kale mixture.
5. **Chill:** Fold the plastic wrap over the top to seal. Refrigerate for at least 6 hours, or until completely firm.
6. **Slice and Serve:** Unmold, remove plastic, and use a sharp knife to slice into cylinders.

## 2. Bacon-Wrapped Kale Bundles (Structured Side/App)
This is a simpler, hot version where bacon provides the structural support for the kale.
### Ingredients
* **Kale:** 1 bunch, stemmed.
* **Bacon:** 10 slices, raw.
* **Flavor:** 1 tbsp olive oil, 1 clove garlic (minced), 1 tsp balsamic vinegar.
* **Structure:** Kitchen twine.
### Instructions
1. **Pre-cook Kale:** SautΓ© the kale in olive oil and garlic until just wilted (about 3 minutes). Add balsamic vinegar, remove from heat, and let cool slightly.
2. **Assemble Bundles:** Take a small handful of sautΓ©ed kale and form it into a tight cylinder shape.
3. **Wrap:** Wrap a slice of raw bacon around the kale cylinder.
4. **Secure:** Tie the bundle with kitchen twine to hold its shape during cooking.
5. **Cook:** Bake at **400°F (200°C)** for 15-20 minutes, or until the bacon is crispy. Remove twine before serving.

### Plating Suggestion
For an "Art Style" photo, place the cylinder standing up on a smear of garlic-herb goat cheese or a lemon-caper reduction, garnished with microgreens.
