Ingredients:
For the Chicken:
2 cooked chicken breasts, shredded or sliced
1/4 cup mayonnaise
1 teaspoon Dijon mustard
1/4 teaspoon garlic powder
Salt and black pepper, to taste
For the Sandwiches:
4 slices of bread (sourdough, white, or whole wheat)
4 slices of cheese (cheddar, Swiss, or provolone)
1 small tomato, sliced (optional)
1 tablespoon butter
Instructions:
Prepare the Chicken Salad:
In a bowl, mix shredded chicken with mayonnaise, Dijon mustard, garlic powder, salt, and pepper until well combined.
Assemble the Sandwich:
Place a slice of bread on a clean surface. Layer half of the chicken mixture on top, then add tomato slices if using. Top with a slice of cheese and the second slice of bread.
Cook the Sandwich:
Heat a skillet over medium heat. Butter the outside of the sandwich lightly on both sides. Place the sandwich in the skillet and cook for 3–4 minutes per side, pressing lightly with a spatula, until the bread is golden brown and the cheese is melted.
Serve:
Remove from the skillet, cut in half if desired, and serve hot.
Tips:
For extra flavor, add caramelized onions or cooked bacon to the filling.
You can also toast the sandwich in a panini press for a crispier version.
Swap the cheese for pepper jack if you want a little heat.
